  • 1 kg whole organic chicken
  • 1 onion
  • 150 grams ginger (unpeeled)
  • 2 garlic cloves
  • 2 celery stalks
  • 10 whole black peppercorns
  • Non-iodized salt/Kosher salt
  • Coriander leaves

Ginger chicken soup recipe

  1. Cut chicken into pieces and washed it.
  2. Cut onion into the fine slice.
  3. Crush garlic cloves.
  4. Chopped celery stalks.
  5. Cut ginger into ½-inch-thick slices.
  6. Put onion, celery, ginger, garlic, peppercorns, and chicken in a pot.
  7. Add 6 quarts of water and bring to a boil over medium-high heat.
  8. Cover the pot with a lid.
  9. Reduce heat to low and cooked it for 30 minutes.
  10. Remove chicken pieces from the pot and let them cool.
  11. Continue to simmer soup, uncovered, until broth is fully flavored.
  12. Now add chicken pieces to soup to rewarm, about 5 minutes.
  13. Remove chicken from broth. 
  14. When cool, using a fork or your fingers, shred the chicken meat, discarding the skin and bones. 
  15. Add salt and rewarm soup. Divide chicken among bowls. 
  16. Pour hot broth over, dividing equally. Garnish soup with cilantro leaves, if desired.
